Zucchini Soup

The Zucchini Soup is easy, tasty, and creamy. Everybody loves this soup, especially kids.

 

WHAT YOU NEED

-4 or 5 light green zucchinis
-1 Onion 
-1 Garlic clove 
-1 Potato
-¼ Celery root
-½ Leek 
-3 tbsp of olive oil 
-½ cup rolled oat 
-1 Dill bunch 
-8 mint leaves 
-½ tbsp butter 
-½ tsp turmeric 
-¾ tbsp salt
-Fresh black pepper to taste.

 

HOW TO MAKE

    First, organize all the vegetables, put on music that you love, and start cooking.

    • Peel all the vegetables and cut the zucchini, onion, garlic, potato, celery root, and leek into large cubes. 
    • In a soup pot on medium heat, add the olive oil and the cut vegetables. Stir for 2-3 minutes. 
    • Add water to the pot, about a finger length above the vegetables.
    • Add the oats, dill, turmeric, salt and pepper. 
    • Bring to a boil, cover the pot and lower the heat to medium-low. Continue cooking for another 40 minutes. 
    • Taste the water and see if more salt is needed. 
    • Add the mint leaves to the soup and use a hand blender to blend the soup into a unified thick texture. 
      Serving suggestion: On each bowl, add a tbsp of sour cream, sprinkle some dill leaves and drizzle olive oil on top. This way the soup is even more tasty!
