Our fastest healthy and delicious homemade dish
When we renovated the house in Greece, there was almost nothing in it, Mikey, Elya and I slept on mattresses, no chairs, no table, 2 plates and a pan with a small refrigerator and an oven.
At the local supermarket we bought coconut milk, parchment paper, quinoa and some vegetables, we made a sauce, mixed everything on a tray and put it in the oven, the smell was already delicious, we sat down on a blanket spread on the floor, with our backs facing the cold wall with a plate in hand and a spoon longigng for the next bite. A heater with two orange stripes is very close as the match girl plot.
Vegetables in the oven in coconut and quinoa sauce
you can replace the quinoa with any other grain, millet, brown rice, oats, buckwheat even red lentil.
Regarding the vegetables, all vegetables are welcome, the base is red onion and optional, carrot, potato, sweet potato, green and red cabbage, pumpkin, pepper, zucchini, cauliflower, Brussels sprouts, broccoli, eggplant, cilantro, parsley, everything works
The dish goes into the oven for an hour and twenty.
WHAT DO WE NEED?
1 cup of quinoa soaked in water for 3-8 hours
For the sauce:
3 grated garlic cloves
1 tablespoon grated ginger
4 tablespoons of olive oil
1 cup of coconut milk (you can also use coconut cream)
½ cup of water
1 teaspoon paprika
1 teaspoon curry
¾ teaspoon cumin
½ teaspoon of turmeric
¾ teaspoon black pepper
1 teaspoon Aleppo pepper (optional)
Mix all the sauce ingrediants together and set aside.
For the vegetables - I used
1 large purple onion
1 green zucchini
1 red pepper
1 large carrot
½ green or purple cabbage
1 white or orange sweet potato
1 tomato
A bunch of coarsely chopped cilantro
4 kale leaves, or Swiss chard
HOW TO MAKE?
Soak a cup of quinoa in water for a minimum of 3 hours
Heat oven to 190c 390f
Mix well all the sauce ingredients together in a work or measuring cup, coconut milk, water, ginger, garlic, paprika, cumin, turmeric, black pepper, salt, curry, and alfo, set aside
Peel and arrange all the vegetables in advance
Cut all the vegetables into medium small cubes and put them in a large work bowl
Pour out the water of the soaked quinoa
and add the quinoa to the vegetables
Pour the coconut sauce in
Mix everything together
Transfer to a Pyrex that goes into the oven
Cover with parchment paper like a baby covered with a bandage
Put in the oven for 1:20 hour and twenty minutes
Remove and serve together with a salad,hummus, tahini spread, yogurt. Whatever is available will be delicus with this dish.
