GF Flat Bread

"We should have a red line," my mother says. “From time to time, you can taste a cake, some ice cream, cheese and chocolate, but know when it is time to stop! "Sugar on a wound will never heal".

All of mom's sentences resonate all the time, and then I say out loud: "I'm not touching any of this tomorrow".

The first day of my cleanse, all I'm craving is a piece of bread.

This flat bread was invented in a crave like that... I found the most delicious thing, that never crosses mom's red line.

 

WHAT YOU NEED

For the dough:
-2¼ cups of water
-1 tbsp psyllium
-1 tsp salt
-1 cup quinoa or teff flour
-1 cup almond flour
-3 tbsp olive oil
-2 tbsp apple cider vinegar
-2 tbsp chia seeds
-2 tbsp flax seeds

For the sauce:
-3 tbsp tomato paste
-⅓ cup water
-1 tbsp maple syrup
-¾ flat tsp of salt
-3 tbsp olive oil

For the onion mix:
-2 purple onions, thinly cut to thin strips 
-2 garlic cloves, crushed
-1 cup Kalamata olives, chopped
-3 tbsp olive oil
-2 Sage leaves
-Salt and pepper to taste

HOW TO MAKE

The tomato sauce:

  • In a jar, add the tomato paste, water, maple syrup, salt and olive oil. Mix well with a fork and set aside.

The onion mix:

  • In a mixing bowl, add the thin cut onion, garlic, olives, olive oil and sage. Mix well by hand and set aside.

The flat bread:

 
  • Preheat the oven to 385F/195C.
  • In a mixing bowl, add 2 cups of water with psyllium and stir. Let it sit for 3 mins and stir again.
  • Add the flours, oil oil, chia seeds, flax seeds, app;le cider vinegar and salt. Mix for 2 minutes.
  • Place parchment paper on a rectangular 18”X12” pan, sprinkle olive oil and spread the mixture over the entire pan.
  • Bake in the oven for 15 mins.
  • Remove from the oven, spread the tomato sauce with a spoon and pour the onion mix on top evenly.
  • Bake again at the same heat for another 15 minutes.
  • Remove from the oven and slice it up.


*Note: You can make it a pizza by topping it with cheese like mozzarella, basil, tomato, or play with any topping you like.

 -  You can use any gluten free flour you like. I find quinoa and teff to be my favorite
