Vegan, gluten free with no added sugar
25-30 cookies

These cookies are perfect. They are without all of the things we don't want in our life; eggs, dairy, gluten and processed sugar. If you want, you can take out the chocolate chips to be completely in control. 

WHAT YOU NEED?

2 cups of almond flour
¾ cup Oat Quaker
½ cup raw tahini
½  teaspoon of Maldon salt (or your regular salt)
⅓ cup extra dark chocolate chips (I use Guittard 63% dairy-free chococlate chips)
½ cup pecans
¼ cup maple syrup
3 tablespoons avocado oil
1 tablespoon of vanilla extract
1 full teaspoon of baking powder
½ teaspoon of baking soda

HOW TO MAKE?

Preheat oven to 350F or 175C

  • In a Mixing bowl mix the almond flour with the oats and salt. Crush the pecans in with your hands, add the chocolate chips, maple syrup, oil, tahini, vanilla extract, and finally, the baking powder and baking soda. Mix until even. 
  • Then, place parchment paper on a large baking sheet; no need to grease it. For convenience, consider using disposable gloves. Then take about a tablespoon of the cookie mixture, roll it in your hands and flatten it between your palms.
  • Bake in the preheated oven for 13 minutes. 
  • Allow the cookies to cool completely before tasting and storing them in your favorite jar.
