Sweet potatoes in green sauce
This is my winner recipe in the TV show MKRWhat do we need?
1 kg of small sweet potatoes (any kind)
¼ cup olive oil
1 and ¼ tsp Salt
1 tsp Paprika
¼ tsp Black pepper
2 crushed garlic clove
HOW TO MAKE
- Fill up a pot with water and place it on the stove to heat.
- In the meantime, peel the sweet potatoes. Once the water is boiling, add the peeled sweet potatoes and cook for 20 minutes. After cooking, drain the water and allow the hot air to evaporate for 2 minutes.
- During this time, preheat your oven to 400°F (200°C).
- In a separate bowl, combine salt, pepper, crushed garlic and paprika with olive oil. Pour this mixture over the sweet potatoes, and arrange them on parchment paper. If dealing with larger potatoes, halve them and place them face down on the parchment paper.
Cook in the oven for 25-30 minutes. Then, flip the sweet potatoes and cook them in the oven for an extra 5 minutes.
FOR THE GREEN SAUCE
1 bunch of Basil (around 115g)
1/2 bunch parsley or cilantro
3 Shallots
3 Garlic cloves
1 Jalapeno (Take the seeds out)
2 tablspoon mint
¼ cup Olive oil
1 tsp salt
⅓ cup walnuts
1 lemons for juice
½ cup tahini
⅔ cup water
HOW TO MAKE?
- In a nonstick pan, fry the walnuts with the olive oil. Add the jalapenos, salt, pepper, chopped shallots, and garlic on medium heat. Wait until the onions soften and then add the parsley or cilantro.
- Pour the mixture into the blender and add the basil and mint, tahini, lemons and water. Blend until smooth.
What do we need?
1 large purple onion
1 big lemons
2-3, garlic cloves
1 tsp salt
2 tbsp maple syrup
¾ teaspoon pepper
⅓ cup olive oil
HOW TO MAKE?
Chop the onion and add it to a large jar with lemon juice, olive oil and maple syrup.
Then chop the garlic and mix it with the salt and crushed pepper until it becomes a paste. Add the paste and shake the jar. Leave it aside for at least 30 min. And shake again.
In the meantime, start making the toppings.
ROASTED PEACANS For the topping
½ cup pecans
Half tsp of Sunflower oil (avocado oil also works)
¼ tsp of salt
½ teaspoon suger
Pinch of pepper
HOW TO MAKE?
Crush the pecans in half with your hand and fry them In a nonstick pan on medium heat with sunflower oil, salt, suger and pepper. Shake it and put it back until roasted.
Serve : in a beautiful bowl spread 2 tablespoon of the green sauce, place 3 roasted sweet potato, a handful of the pickled onion, couple of pecan and drizzle olive oil on top
