This salad takes 5 minutes and we all end up fighting for the last bite. Hagai is my old friend from the air force, he used to be a trouble maker and now he is a good boy and a good cook. When I see him in the kitchen, I always steal ideas from him. Kale with Roasted Almonds is one dish he inspired me to make.
WHAT YOU NEED
- 3 garlic cloves
- 1 Kale bunch
- ½ cup sliced almonds
- 4 tbsp olive oil
- Juice from 1 lemon
- Salt and pepper to taste
HOW TO MAKE
- On a cutting board, slice the garlic into thin circles.
- Remove the kale leaves from the stems and chop them coarsely.
- Place a pan on medium high heat and roast the almonds for about 2 minutes or until golden.
- Add 1 tbsp of olive oil and the sliced garlic to the pan with the almonds and stir until the garlic softens.
- Add the chopped kale into the hot pan with another 3 tbsp of olive oil, juice of 1 whole lemon, salt and pepper, and stir until soft, about 3 minutes.
