Shir’s Cabbage steak

In the high season of quarantine. When we were modeling pajamas all day long, and the kitchen became the center of the world. The new indoor life made me obsessed to the point I will go to sleep and dream of a new dish at night, just like the periodic table combination, this cabbage was a dream that came through.

WHAT DO YOU NEED?

  •  1 green cabbage (cut to 4/5 pieces, 1 and 1/2 inch wide),The heavier the     cabbage the more "meat" you will have

 

  •    Each slice you place on a parchement papper and you put on top the following:
  •   2 tablspoon olive oil
  •   4 cherry tomato sliced to 2
  •   1/2 sliced shallot
  •   3/4 garlic clive sliced thin
  •   4 kalamata olives  
  •   6 capers 
  •   salt and pepper 
  •   paprika
  •   thyme 

            Yogurt sauce is importand in this combination
             if you are vegan enjoy this cabbage steak as is

  • mix the following:
  • 3/4 cup full fat yogurt,
  • 1/4 cup of sour cream,
  • 1 teaspoon chopped chives
  • 1/2 teaspoon chpped fresh mint( you can also use dry mint
  • , salt, lemon zest, pepper and 1/2 crushed garlic

 

How to make:

  •  When the hard stem of the cabbage placed on the side,  cut to thick pieces (1 and 1/2 inch)
  • Spread olive oil, garlic, onion, kalamata olives, cherry tomatoes, capers salt pepper paprika, thyme or whatever you dream of
  • fold the parchment papper with the sliced cabbage and put on a baking pan the folded side down
    repeat the rest of the sliced cabbage 
    place in the oven for 2 hours on 330f  

  • The yogurt sauce:  mix the following 3/4 cup full fat yogurt, 1/4 cup of sour cream, chooped  mint and chives, salt, lemon zest, pepper and 1/2 crushed garlic, you can add 1/2 teaspoon of maple syrup (optional)
  • mix well and put 3 tablespoon from the yogurt sauce on the side of the cabbage steak,  serve yourself.
