WHAT YOU NEED
- 2 lb of cherry tomatoes
- 10 garlic cloves
- 1 cup of olive oil
- 1 tablespoon of brown sugar
- 1 tablespoon of salt
- 3 sage leaves (or thyme)
- 4 slices of lemon
- 1 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
HOW TO MAKE
On a cutting board, slice half of the cherry tomatoes in half and leave the others whole and slice the garlic. Then, place all the cherry tomatoes in a pot. Add olive oil, sliced garlic, sugar, salt, sage and lemon. Put the pot on high heat for 5 minutes. Then, add the paprika and cayenne and mix it well. Lower the heat to medium and cook for another 35 minutes. Mix once every 5-6 minutes. Scrape the sides as you’re mixing to bring out a deeper flavor.
