WHAT DO WE NEED?
½ cup of olive oil or sunflower oil(120 ml)
2-3 onions cut into large cubes
250 g green beans (around 2 cups)
2 red peppers, cut into cubes of 1 ½ inch
½ hot jalapeno/green pepper,finely chopped
5 garlic cloves, sliced
½ butternut squash (about 1/2 kg) cut into 1 ½ inch cubes
2 medium zucchini, cut lengthwise into 4 each, and then halved
½ large eggplant, cut into 2 inch pieces
2 potatoes cut into 1 ½ inch cubes
2 peeled tomatoes, cut into small cubes
3 teaspoons of salt
1 tablespoon of sugar
Spices (mix all in measuring cup)
1 ½ cups warm water (360 ml)
1 hip tablespoon tomato paste
3 teaspoons of salt
1 tablespoon of sugar
Freshly ground black pepper
For the pumpkin seeds:
30 g of butter (1 tablespoon)
1 cup of pumpkin seeds
¼ teaspoon Salt,
fresh black pepper
HOW TO MAKE?
- On a medium heat on a wide deep pan, that you can place in the oven after, pour the oil and stir fry the onion with garlic for 2 minutes
- Add on the cut red peppers, jalapeno, eggplant, zucchini, potatoes, butternut squash green beans and the cut tomato
- In a measuring cup mix until you combine the warm water with tomato paste, salt, sugar, and black pepper.
- Pour the mix liquid on top of the vegetable and stir .
- Bring it to a boil covered with a lid and cook on low heat for 35 min. At this time the vegetables are getting softer and they observe taste from the liquid.
- Heat the oven on 350 F, 180C
- Place the pan in the hot oven without the lid for 1 ½ hour, mix the vegetables once at that time. After 50 min in the oven
Roasted Pumpkin seeds:
- I always start this dish with preparing the seeds first.
- In a pan On a medium low heat, spread the pumpkin seed,with salt and black pepper,
- place the cube of butter in the middle and start shaking the pan with your hand back and forth while the butter is melting.
- Shake the pan and let it sit still for 15 seconds, shake again repeat until you get golden seeds. ( some seeds will pop out).
- let it cool completely
When taking out the vegetable from the oven, spread the roasted seeds all over the roasted vegetables/
