Pickled Red Onion

The ultimate way to eat an onion, inspired by my talented cousin, Liron.
There is nothing better than this!

You can put it on toast, add to salads and meat, on the dinner table or a picnic blanket.

It works with everything, trust me on this one.  

 

WHAT YOU NEED 

- 1 Large Red onion 
- 2 garlic cloves
- 1¼ tsp gray salt (or regular kosher salt)
- ⅓ tsp black pepper 
- Juice from 1 juicy lemon 
- ½ cup olive oil
- 1½ tsp brown sugar

 

HOW TO MAKE

The onion:

  • Peel the onion and cut it in half through the root end. Slice into thin strips.
  • Transfer the sliced onion to a glass jar.

The garlic paste:

  • On a cutting board, place 2 peeled garlic cloves with the salt and pepper. 
  • Thinly chop the garlic and place the salt and pepper on top. 
  • With the side of your knife, press and pull the garlic with salt and pepper, smashing them together. Chop everything again. 
  • Gather the paste and repeat the action of smashing (or pressing) the ingredients together until you have an even texture of garlic paste. 

Mix it all together:

  • Transfer the paste to the jar, on top of the  sliced onion. Add the lemon juice, olive oil, and sugar. With a fork, push the garlic paste down to mix up the ingredients. Cover the jar with a lid and shake it well in your hand for about a minute or two. Shake it, shake it! The more you shake, the better it will taste!
  • Set aside and let it sit for at least 20 minutes, up to 2 days in the fridge. After that, it's ready for eating, on anything you wish! Just give it a good shake before serving.

When my children had a cough or sore throat I used to put honey instead of sugar and give them the liquid to drink - it works like a medicine.
