This cake i make for myself it is not to sweet, without refine suger and it doesnt have eggs , it is simple perfect vegan sweet snack anytime with coffee or tea
* If you want to make it gluten free put 2 cups of almond flour not 1 and 1
WHAT YOU NEED?
3 ripe bananas
3 Organic carrots
⅓ cup maple syrup
1 teaspoon vanilla extract
⅓ cup avocado oil
¼ teaspoon salt
⅓ cup risans
⅓ cup walnuts
2 tablespoon dark chocolate chip
Optional ¼ cup orange juice or alternativ milk
2 cup almond flour
⅓ cup tapioca flour
1 teaspoon baking powder
¾ teaspoon baking soda
HOW TO MAKE
- In a large bowl place all the bananas and smash them with a fork
- Grate all the 4 carrots and add them to the bowl
- Add the oil,vanilla and maple syrup mix well
- Now add all the dry ingredients ,almond and tapioca flour,regular flour, baking powder and baking soda.
- Mix well
- Put it in a round pan that you grease the bottom and all around with avocado oil
- You can also place parchment paper on the surface of the pan and grease all around.
- Pour the mixture in the pan
- Bake for 50 minute to 1 hour on 350F
