Sesame Cabbage Salad



I made a colorful meal, tahini with beets, wild rice, pumpkin in the oven and I was missing a salad, and I always have cabbage, You can do a million things with it, it needs its own book, you can make it cooked, you can make it fresh as a salad, you can bake it in the oven, you can fill it and more. in winter the market is full of cabbages, and everything that grows in season should be supported and given to our body , the cabbage is a cleanser and full of vitamin C, the heavier it is, the tastier the salad will be..

This salad is also delicious the day after, I leave it outside and every time something walks by and takes a fork full of salad, until it runs out and it always runs out.

Two important processes in the preparation of the salad
1 chop the cabbage on a mandolin as thinly as possible,
2 Let the sauce sit in the jar inside itself for a minimum of 20 minutes

WHAT DO WE NEED?

½ green cabbage (choose the heaviest in the bunch)
½ cup toasted sesame (in japanese store they sell already tostad)

For the sauce, mix everything in a jar:
1 small chopped shallot
¾ crushed garlic clove
1 tablespoon maple syrup
3 tablespoons of olive oil
1 tablespoon sesame oil
1 teaspoon light color miso
1 squeezed lemon
1 tablespoon of water
1 tablespoon of white wine vinegar
¾ teaspoon of salt
½ teaspoon black pepper
1 teaspoon balsamic vinegar 
¾ teaspoon dizon mustard (optional)


HOW TO MAKE?
  • In a work bowl, using a mandoline, chop half the cabbage very thinly, set aside.
  • Heat a pan over medium heat and toast the sesame until it turns a light brown color
  • You can also buy roasted sesame, after roasting put it aside to cool.
  • In a glass jar put the chopped shallot together with the crushed garlic, lemon juice, sesame oil, olive oil, white wine vinegar, water, miso, maple, mustard, salt, pepper and balsamic, close the lid and shake until everything is mixed well 
  • Open  the jar And put your finger in and taste if some salt is missing, if so add some.
  • Wait at least 20 minutes with the jar close and then pour the dressing over the cabbage, add the toasted sesame and mix the salad together.

Transfer to a beautiful plate and serve.
