Green Sauce

The Green Sauce is beautiful and extra tasty with any food, adding a kick of flavor to a maybe-slightly-dull meal. I like adding it to my butter toast, or any sandwich. Sometimes, it will be used as a sauce for my pasta, rice or lentils. Other times, I spread it on crackers, or even just eat it straight from the jar with a spoon. 

This is my favorite spread to have at home. It lasts for about a week and a half in the fridge. Enjoy!

Suggestion: I highly recommend wearing gloves while preparing the Green Sauce.

 

WHAT YOU NEED

- 7 jalapenos
- 5 garlic cloves
- ¾ cup of olive oil
- 1 bunch of cilantro
- 10 fresh basil leaves (optional)
- 1 tsp sugar OR 1 tbsp of maple syrup
- ¾ tsp salt

Topping: 2 tbsp olive oil


HOW TO MAKE

  • With gloves on, cut off the top part of the jalapeno. 
  • Cut the jalapeno in half longways from top to bottom. With a knife or spoon, remove the seeds. Repeat this step with all the jalapenos.
  • On a cutting board, remove the cilantro stems and peel the garlic cloves.
  • In a food processor or blender, add the jalapeno halves, peeled garlic cloves, cilantro, basil leaves, sugar or maple and salt. Blend for about 1-2 minutes on medium speed. The mixture should be semi-blended and a bit chunky. 
  • Transfer to a glass jar, add 2 tbsp of olive oil on top, and store in the fridge for your next meal!
