Perfect Recipe
In my opinion, this is the bread closest to traditional bread, but it comes with all the benefits: it’s gluten-free, made from green buckwheat, one of the most important and healthy grains out there. This is the tastiest bread recipe!
Important Tip: Toast it before eating, even twice.
Ingredients:
- 1 package of green buckwheat by Edens Food (16 OZ) soaked overnight in 4 cups of water
- 2 ⅓ cups of water
- 1 tablespoon of salt
- 1 cup of quinoa flour, or teff flour, or almond flour, or millet flour
- 2 tablespoons of olive oil
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of yeast
Instructions:
- Soak the buckwheat in 4 cups of water overnight. In the morning, rinse the buckwheat in a strainer under running water.
- In a blender, combine the rinsed buckwheat with 2¼ cups of water and the tablespoon of salt. Blend on high until smooth.
- Transfer the mixture to a deep bowl, add the cup of flour of your choice, olive oil, vinegar, and yeast. Mix thoroughly until you have a uniform batter.
- Cover the bowl with a towel or plate and let it sit for 4 hours.
- Preheat your oven to 400°F (195°C).
- Grease a loaf pan with olive oil, and you can also line it with parchment paper.
- Pour the batter into the pan and sprinkle sesame seeds on top, if desired.
- Bake in the oven for 1 hour, then remove and let it cool.
