Gluten-Free Buckwheat Bread

In my opinion, this is the bread closest to traditional bread, but it comes with all the benefits: it’s gluten-free, made from green buckwheat, one of the most important and healthy grains out there. This is the tastiest bread recipe!

Important Tip: Toast it before eating, even twice.

Ingredients:

  • 1 package of green buckwheat by Edens Food (16 OZ) soaked overnight in 4 cups of water
  • 2 ⅓  cups of water
  • 1 tablespoon of salt
  • 1 cup of quinoa flour, or teff flour, or almond flour, or millet flour
  • 2 tablespoons of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of yeast

Instructions:

  1. Soak the buckwheat in 4 cups of water overnight. In the morning, rinse the buckwheat in a strainer under running water.
  2. In a blender, combine the rinsed buckwheat with 2¼ cups of water and the tablespoon of salt. Blend on high until smooth.
  3. Transfer the mixture to a deep bowl, add the cup of flour of your choice, olive oil, vinegar, and yeast. Mix thoroughly until you have a uniform batter.
  4. Cover the bowl with a towel or plate and let it sit for 4 hours.
  5. Preheat your oven to 400°F (195°C).
  6. Grease a loaf pan with olive oil, and you can also line it with parchment paper.
  7. Pour the batter into the pan and sprinkle sesame seeds on top, if desired.
  8. Bake in the oven for 1 hour, then remove and let it cool.

And there you have it: the tastiest gluten-free bread! I cut it into thin slices, place parchment paper inside a Pyrex dish, seal it, and freeze it. Whenever I want a slice of bread, I take out 2
