Crispy Lemon Curd - winning cake

 

Today no one was at home, I put on TV the finale of MKR- my kitchen rules, this is one of the shows that gives a pleasant breather during this period, the competition also comes from love,
The team behind this production makes me long for my country. There is a reason why I am far away, I wonder why a person chooses to run away from his home, and whether to even call it an escape.
  When I saw the program, I heard myself saying  that outside my home I always flourished. Now precisely after winning the competition, which made me very happy, I flourish in my home. It makes you think and let the story tell itself.

WHAT DO WE NEED? 

Meringue
4 egg white
¾ cup white sugar
½ teaspoon of cornstarch with ½ teaspoon of water or vinegar
  (save the egg yolks for the lemon curd and the crispy dough)

Crispy dough
1 and a half cups of flour
140 grams of butter cut into cubes
6 tablespoons of powdered sugar
2 and a half tablespoons of heavy cream
½ teaspoon of salt
½  a beaten egg yolk

Lemon curd
3 lemons for lemon zest
4 egg yolks
½ a cup of sugar (120 grams)
1/2 cup lemon juice 120 ml
100 grams of butter
1 teaspoon of cornstarch  with 2 tablespoons of water

Whipped cream
1 package of large sweet cream, 470 grams (or 2 small packages)
1 container of yogurt (cup)
2 or 3 tablespoons of powdered sugar

Berries sauce
1 ½ cups of berries
Strawberries, wild strawberries, blueberries, raspberries, cherries,...
½ lemon for juice
½ teaspoon lemon zest
1 tablespoon coconut or brown sugar
4 chopped mint leaves

HOW TO MAKE?

The meringue
Preheat oven 110C, 230F
separate the egg white from the yolk (keep the yolks)
In a mixer on high speed, put the egg whites, and slowly add the sugar
until a stable foam is obtained
Mix the cornstarch with  2 tablespoons of water,to melt,
 add it to the foam and mix
on parchment paper in a rectangular pattern
Spread the foam ½ inch  thick
Put in a turbo oven for 55 minutes (if you don't have turbo, bake it 1:20 mn)
Leave the meringue in the oven off, for at least another 30 minutes

Crispy dough
Put the flour, powdered sugar, cubes of butter, sweet cream, salt, and a beaten egg into a food processor.
Mix until you get a lump
Form a ball and wrap in plastic wrap.
Put in the fridge for half an hour
Roll out the dough between two parchment papers
Take off the top paper
Put in the oven for 20 minutes at a temperature of 180c

Lemon curd
Mix the cornstarch  with 2 tablespoons of water until dissolved
In a small pot over medium heat, grate the peel of the lemons, add the lemon juice, egg yolks, sugar, and cornstarch, mix until it bubbles and the texture thickens,
Turn off the heat and throw in the butter, mix
pass through a strainer to obtain a velvety lemon curd,

Whipped cream
Put heavy cream with yogurt and powdered sugar in a mixer
Mix until you get whipped cream, stable and soft.

Berry sauce
Put the berries in a bowl with the sugar, lemon, zest and chopped mint
With the palm of your hand, mash everything together until you get mashed fruits with more sauce.


Serving
In a bowl, put a square of crispy dough
Top it with heaping spoonfuls of whipped cream
Lemon curd on top 
Top it with meringue
and on top of 2 tablespoons of berry sauce
