Butternut Squash Cubes

This Butternut Squash ‎dish is like a candy box. You will love unwrapping it as it comes out of the oven. This is a delicious and simple recipe. Healthy side dish for any meal, and a great treat for the holidays.


WHAT YOU NEED

-1 Butternut squash, peeled and seedless
-1 tsp coconut sugar or cane sugar
-20 gr of cold butter, cut into cubes
-¼ cup of olive oil
-1 shallot onion or ½ red onion
-3 cloves of garlic
-1 tsp of thyme leaves
-¾ tsp gray salt or kosher salt
-½ tsp fresh black pepper. 


HOW TO MAKE

  • Cut the squash into cubes and place them in a pie pan, or any oven-safe dish, lined with parchment paper.
  • ‎‏In a separate bowl, put the olive oil with the thyme.
  • ‎‏On a chopping board, chop together garlic, onion, salt, pepper and coconut sugar. Cut the butter into small cubes, add to the olive oil mixture and mix, pour on the pumpkin, mix everything.
  • Cover with a second sheet of parchment paper, like you cover a baby :) 
  • Bake in the oven at 400F/200C for an hour and 15 minutes.

  • ‎‏Serving sauce suggestion:

    -4 tbsp whole milk yogurt
    -‎‏1½ tbsp mayonnaise
    -¼ cup chives 
    -‎‏4 mint leaves ‎‏
    -Salt and pepper to taste
    -‎‏½ tsp maple syrup (optional)

    Chop the chives and mint leaves. Combine all ingredients together, mix well and drizzle on top. ‎‏Bon Appetit!
