Brooklyn Babka Cake

Brooklyn Babka Cake

In this circle of life I already learned that every start comes to an end, every end comes with pain and longing to what was, and what you have lost.
Then time appears and brings with it its own qualities, time to connect back to your source, to be clear of who you are, what you have and what you want to create time to dance, to bake a cake that the smell will absorb in the walls of your own home to represent you and then a new beginning rises, sweet and tasty.

Ingredients:

5 ½ cups of plain flour
250 grams butter cut into cubes and softened
4 eggs
 cup of heavy cream
½ cup of sugar
2 tablespoons dry yeast or 30 grams of fresh yeast
3/4 cup of water
¾ teaspoon of salt

Syrup:
½
cup water
½ cup sugar

Preparation:

  1. Mix all the ingredients,  knead by hand or in a stand mixer until well combined, it takes 5-7 minutes.
  2. Cover with plastic wrap and put aside for 3-5 hour, even overnight.
  3. preheat the oven to 350°F or 180°C
  4. Roll out half or a third of the dough and fill it with whatever you want ie. Nutella, Jam, Cinnamon sugar… you get the gist
  5. Roll your sheeted and filled dough into a long, cut it in the middle and twist, placing one over the other to create the babka shape, leave outside after shaped for 45 minutes and then bake for about 30-40 minutes or until browned and looks like a fine piece of babka
  6. For the syrup heat up the sugar and water in a saucepan until it's melted and brush it onto the babka
