Ani׳s Delicious Gluten-Free Chocolate Cake

These days, I have 9 people at home (besides myself). Everyone is in their twenties, they’re all beautiful, loving, and our home is always open and welcoming.. I have to mention that Alon and I maintain a family-oriented home. However, with so many people in their twenties, there are some specific dietary needs: one person is allergic to nuts, one is gluten-free, one doesn't like tomatoes, and one can't eat spinach. As a cook, I need to be careful and often warn, "This has nuts," or "This has spinach," and so on.

Recently, I discovered the best gluten-free chocolate cake in the world, and I’ve made it three  times since then. It has become a dream cake, with requests coming from everywhere. The cake is gone the same day it’s made — it’s simply perfect.

Ingredients:

  • 4 eggs, separated
  • ¾ cup brown sugar
  • 1 ¼ cups almond flour
  • ⅓ cup heavy cream
  • 180g butter
  • 200g dark chocolate (60% cocoa or higher)
  • Pinch of salt
  • 1 tsp vanilla extract
  • ¾ cup sour cream
  • 1 ¼ tsp baking powder
  • ½ cup walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Melt the chocolate: In a small saucepan, melt the dark chocolate, butter, and heavy cream over medium-low heat. Stir until everything is fully melted and smooth. Let it cool.
  3. Separate the eggs: In one bowl, place the egg yolks (the yellow part), and in a separate, larger mixing bowl, beat the egg whites (the whites) on the highest speed of your mixer. Gradually add the sugar while beating until stiff peaks form.
  4. Mix the batter: Once the egg whites are stiff, add the egg yolks, a pinch of salt, sour cream, vanilla extract, almond flour, and the cooled melted chocolate. Mix everything well.
  5. Prepare the cake pan: Line the bottom of a round cake pan with parchment paper. Grease both the sides and bottom of the pan with butter.
  6. Pour the batter: Pour the cake batter into the prepared pan.
  7. Bake: Place the cake in the oven and bake for about 32 minutes
  8. Cool and garnish: Let the cake cool completely. Once cooled, sprinkle broken walnuts on top (optional but adds a lovely crunch).
