Almond Feta
An excellent vegan cheese. Wherever you would put regular feta, that's how you should treat this almond feta - in salads, on spreads, in sandwiches.
Just make it, because it's an easy recipe and comes out perfect!
WHAT YOU NEED?
1¾ cups of almond flour
2 tablespoons nutritional yeast
1½ tbsp Dijon mustard
3 garlic cloves
1 tbsp maple
1 tbsp apple cider vinegar
1 lemon
3 tbsp olive oil
⅓ cup water
1½ tsp salt
HOW TO MAKE?
Preheat the oven to 350 F
- In a food processor, combine the almond flour, garlic, lemon juice, water, Dijon mustard, olive oil, nutritional yeast, apple cider vinegar, maple syrup, and salt. Process the mixture for a few minutes until it becomes completely smooth.

Scrape down the sides of the processor and mix again until even.
- Once the mixture is silky smooth, place the cheese onto parchment paper and rub 2 tbsp of olive oil all over the cheese, roll the parchment paper into a sausage shape and place it in the preheated oven for 40 minutes.
- Let it cool before opening and slicing.
BEST WAY TO SERVE:
Prepare the green sauce and crumble big chunks of the almond feta onto it. Squeeze a red ripe tomato all over it and serve with my GF crackers. I promise you it’s gourmet!
