Coconut Spinich Dahl

 

 

2 Tbsp Ghee 
2 Chopped Yellow Onion
2 Ripe Tomatoes
5 Garlic Clove
1 Finger of  Fresh Ginger Crushed
1 can coconut Cream
1 and ½ cups of Red Lentils
3 and ½  cups of Water
1 ¼ tsp Salt
1 tsp crushed coriander seeds
1 tbsp curry powder
¼ tsp hot  chili flax
¾  tsp cumin
½ bunch of cilantro leaves to sprinkle on top 

How to make it?

  • In a wide pot on a medium high heat  add the ghee with onion and stir it for 2 minutes.
  • With the side of the knife crush each garlic clove then chop them and add to the onion.
  • Crush the ginger, Cut the tomatoes to cubes add both to the pot with all the juices of the tomatoes  
  • Add the lentils, salt and  3 and ½ cups of water and the can of coconut cream.
  • Stir all well.
  • Crush the coriander and add it to the dish with the ground  cumin, chili flax and curry powder. Stir again so that all the spices will blend in.
  • cover the dish and give it 5 min on medium low heat. Then...
  • Chop the spinach roughly add it to the dish, stir everything together 
  • Lower the heat and cook it for another 25 min on lower heat.
  • For serving:
  • Sprinkle fresh cilantro leaves on top.
  • I like to make Dosa and feel it with this beautiful healthy Dish .
