Judge me by my healthy  pie.

 

WHAT WE NEED ?

1/3 cup of olive oil
1 onion
1 garlic clove
1 sweet potato (white or orange)
1 zucchini
1 pack of frozen organic spinach or fresh spinach 
2 eggs
2 tablespoons of yogurt or heavy cream
Salt and black pepper
Optional:
2 tablespoons of your favorite cheese to mix in
Panko (Japanese bread crumbs) and grated Parmesan 

HOW TO MAKE:

  1. Preheat the oven to 390°F/190°C
  2. On medium heat add the onion and olive oil into a wide pan, while the onion begins to soften, grate the sweet potato, zucchini with the large size of the grater and add the frozen spinach 
  3. Start mixing with a wooden spoon, add pepper salt, and stir until the frozen spinach is softened with the other vegetables
  4. Turn off the heat then add the yogurt and cheese of your choice 
  5. Wait for the mixture to cool and then add the eggs and mix quickly
  6. Transfer to a round pie tray
  7. Sprinkle the Parmesan cheese and Panko (Japanese bread crumbs) with some olive oil
  8. Put in the oven for 45-50 minutes
