Rejin red salad

WHAT YOU NEED

- 30 cherry tomatoes 
- 1 pomegranate 
- ¾ red onion
- ½ red pepper
- ½ garlic clove 
- 1 cilantro bunch
- 1 tsp chopped chili pepper
- 5 mint leaves (optional)

For dressing:
- 3 tbsp olive oil 
- 2½ tbsp pomegranate extract
  (or pomegranate balsamic glaze)
- ¾ tsp Maldon smoked sea salt (or ½ tsp regular salt)
- Fresh black pepper 
- 1 tsp lemon juice 

HOW TO MAKE

  • Cut the cherry tomato longways to 4 pisces each, cut the red pepper to small cubes.
  • Cut the red onion in half, put the open side on the cutting board and start to slice thin slices from the root side of the onion to create thin strips. 
  • separate the cilantro leaves from the stems. Chop the garlic and chili pepper into small cubes.
  • Peel the pomegranate and remove the seeds. Add the seeds to the salad.
  • In a mixing bowl, combine all together.
  • Add the dressing and mix well.
  • Celebrate the love and high vibration of this beautiful salad.
