(Vegan,sugar free gluten free)
I'm in my healthy phase. I love this time, I teach myself boundaries, I create rules that inforse me to pay attention to myself.
I don't eat gluten,meat, dairy,processed sugar, I drink a lot of water and stop eating at 5pm and start again at 9am.
In that phase I play in the kitchen to find tasty healthy and easy recipes that will fulfill my desire for the good stuff.
Those cookies are just that
What we need?
Raspberry filling
1 cup frozen raspberries
1 tablespoon honey
¼ orange for juice
½ tsp lemon zest
For the cookie dough
⅓ cup oat
¾ cup almond flour
⅓ cup raw walnuts
3-4 majhul dates
¼ orange for juice
½ tsp orange zest
4 tbsp olive oil
Little less than ½ cup tahini
1 tablespoon honey
1 teaspoon baking powder
Pinch salt (important)
Preheat 175C 340F
How to make it?
The filling
- In a medium bowl place a cup of frozen raspberry with the lemon zest,orange juice and honey, mix well (you can do it with your hands), and put aside.
- In a food processor mix all the ingredients of the cookie dough until grind. Not too much time ..
- Place parchment paper on an oven tray, Spread olive oil on top.
- Take a piece of dough in your hand and make a solid ball of 3cm.keep doing it with the rest of the dough and put them on the oiled parchment paper
- Press each cookie gently and make a small cave in the middle with your thumb.
- Fill each cookie cave with the raspberries mix .
- keep doing it the way it is comfortable to you ..
- Put in the oven for 25 min. Let it cool completely
