The healthy version of Kabab.
You can mix ground lamb and ground beef, or choose one.
The cooked onion makes the kabab melt in your mouth, it is soft and full of flavor.
I like to serve it with roasted vegetables.
WHAT DO YOU NEED?
1 ½ kg of fresh ground beef or lamb
2 big yellow onion
1 shallot onion
3 garlic clove
½ cup basil, finely chopped
1 tablespoon dill chopped
4 tablespoons oil
Spices:
2 teaspoon salt
1 teaspoon black pepper
3 tablespoon cumin
1 teaspoon paprika
¼ teaspoon turmeric
½ teaspoon aleppo pepper
- In a food processor put the onions, shallot and garlic, pulse until it is well chopped but not too fine.
- In a pen on medium heat, put the oil with the chopped onions, stir fry until soft and some in light brown color.
- Let it cool for 15 minutes
- Put the fresh ground beef in a working bowl and Add the onions, fine chopped basil,chopped dill and spices,Cumin,Turmeric,Paprika, Aleppo pepper, salt and black pepper.
- Mix really well for 4,5 minutes (you can use working gloves)
- Cover with plastic wrap and place in the refrigerator for 3 hours, you can leave it overnight.
- Take it out of the fridge 30 min before making.
- Preheat oven 400F, 200C
- In a baking pan On a parchment paper drizzle some olive oil.
- Start shaping kabab in your hands the way you like.
- Place it in the oven until ready, around 25-30 min.
Serve it with roasted vegetables and tahini, I promise you a delicious result!
