This is the recipe I reached, I ate 8 in number and fell asleep from 7pm until 5am the next morning.
NOTE: You should make these cookies during the orange season, winter. Their peel is so fresh and delicious that you can eat it too.
You need to soak a cup of cashews the night before, and an orange peel two hours before.
What do we need?
1 cup almond flour
½ cup coarsely broken walnuts.
½ teaspoon of baking soda
¼ cup olive oil
⅓ teaspoon of salt
Drizzle 1 teaspoon of honey on the prepared cookies
Cacao mixture - in a blender
1 cup of cashews soaked in water overnight
½ cup almond milk (I prefer homemade)
4 tablespoons of cocoa powder
¼ peel of an orange soaked in boiling water for an hour
½ teaspoon orange zest
⅓ cup honey
¼ orange for juice
sprinkling
Spread 1 teaspoon of honey on the prepared cookies
How to make?
Heat oven to 170c 340f
- Put the ingredients of the Cacao mix together in a blender. You can also use a food processor. Mix until you reach a crumbly paste.
- In a work bowl, put the almond flour, oat, salt, walnuts, olive oil and the blended cacao mixture, add the baking soda at the end, and mix well.
- Place parchment paper on a baking pan .
- With a spoon take from the cookie mixture and place it on the parchment paper keep doing all the cookies about 12-15
- Bake in the oven for about 25 minutes at a temperature of 170c
It tastes amazing
