Liberty Cake

Ingredients:

Dry:
¾ cup almond flour
½ cup coconut flour
½ cup dried blueberries
¾ cup walnut roughly cut
2 tbsp flax seeds
2 tablespoon chia seeds
½ tbsp baking powder
Pinch of salt

Wet:
2 ripe bananas
¾ cup of water
1 egg
1 ½ tbsp maple syrup
⅓ cup olive oil

  1. Mix well all the dry ingredients
  2. Then add the wet ingredients: add the ripe bananas and crush them with a fork, the egg, water, maple and olive oil and mix it well
  3. Oil a small the english pan with olive oil and  put the cake mixture inside
  4. Bake it for 50 min to 1 hour on 175°C/345°F
