Cabbage healthy patties

(Vegan; Gluten-free) 

My mother and I talk almost every day.
At the end of our talk, when we are getting ready to say goodbye, she says,"talk to me please, don't disappear" like a good jewish mother.
In our last conversation, she told me she did Martha Stewart's pierogi receipe, and they were so delicious. Deep deep inside my mother believes she was supposed to be Martha Stewart, not her.
When she described the pierogi, I already imagined my healthy version and I knew it would be that good.

Cooking the cabbage
2 red onions,chopped
½ cabbage, chopped
2 garlic cloves, chopped
⅓ cup olive oil
¼ cup of water
¾  teaspoon of salt
½ teaspoon black pepper
⅓ teaspoon chili flakes
3 tablespoons of soy sauce.

The patties
1 soft sweet potato
½ tablespoon of psyllium
1 cup of quinoa flour

The frying

- 5 tablespoons of ghee.

  • Boil water in a medium pot, put the 2 halved sweet potato in, cover with a lid and cook until the sweet potato softens.
  • Take out the water, put it aside and let the sweet potato cool with the pot lid on. (This way it will be very easy to peel it).
  •   In a soup pot over medium heat, put the olive oil, chopped onions, soften them for a few minutes, then add the chopped cabbage, garlic and a third of a cup of water.
  •   Mix everything with salt, pepper and chili flax.
  •  Close the pot, continue to soften with the lid closed for another 10 minutes on medium heat, stir occasionally, turn off the heat and leave with the lid closed for another 10 minutes.
  • Put the cooked cabbage in a work bowl, add 3 tablespoons of soy, the soft, peeled sweet potato, a cup of quinoa flour, half a tablespoon of psyllium and start mixing a lot with a spoon or your hand, until everything becomes one solid mixture.
  • Prepare yourself a wide glass of water to work near the frying station.
  • Heat a pan with 3 tablespoons of ghee on medium heat
  • Dip your hand in the glass of water and start making patties with the palm of your hand, 1 inch thick, 2 inch wide.
  •   After every 2 meatballs dip your hand in the glass of water again. It makes it easy to work.
  • Place the patties in the pan and let them sit for 4-5 minutes on each side.
  • Stay in touch with your patties, don't abandon the position.
  •  You don't need anything with it, it's so goooooddddd
