Basic Almond Cheese

It is almost  impossible to describe how similar the taste is to  real cheese, but so much  healthier and tastier, when the cheese comes out of the oven, you can put paprika, chopped walnuts or whatever you like on it.

WHAT YOU NEED?

1 ¾ cups of almonds, soak them overnight and peel.
Juice from 3/4 lemon
3 tablespoons of olive oil
1 clove of garlic
1 ¼ teaspoons of salt
¼  cup of water
1 tablespoon nutritional yeast 

HOW TO MAKE?

  • Soak the almonds overnight, the next day replace the water with boiling water, soak for 10 minutes and then peel the almonds easily.
  • Put the almonds in a food processor together with garlic, lemon juice, olive oil, salt, nutritional yeast and water, if you don't have food processor do it in a blender.
  • mix for 2 minutes, pause, with a spoon collect everything that has accumulated on the sides and mix again until Soft but slightly grainy texture.
  • Take out the spread on a cheese  cloth, hang it overnight on the faucet above the sink so that all the liquids drain out.
  • Preheat oven to 180 c 350 f
  • Transfer the block to parchment paper greased with olive oil, cover it and put it in the oven for 40  minutes
  • Remove from the oven and here you have a cheese that you will not be able to resist!!!!

This is the base, you can add spices you like, chili flakes, brewer's yeast, black pepper, rosemary, whatever comes to your mind and your creativity.
