The apricot season is very short, just about four weeks of the summer.
I rush to the farmers market in this short season to buy plenty of apricots, to make jams for my friends and neighbors.
The sugar in the jam is used as a preservative.
WHAT YOU NEED
- 1kg apricot
- 400g brown or white sugar
- Juice from 1 lemon
- 1 bag of Earl Grey tea (optional)
HOW TO MAKE
- Cut the apricots in half and remove the seeds.
- In a cooking pot, soak the seeded apricots with the sugar. Mix it together, cover and set aside for 3 hours, to let the juices extract and merge with the sugar.
- Bring to a boil and lower the heat to medium-low.
- Remove the white foam.
- Add the juice of a whole lemon into the pot.
- Cover the pot and continue cooking for 30 minutes on medium-low heat.
- Remove the white foam again, add the Earl Grey tea bag (optional).
- Continue cooking uncovered on medium-high heat for 10 mins. The jam will bubble and be very hot. Be careful not to touch or taste until cool.
